Wow, almost a week into the 12wbt program and still going strong…I had a bit of a hard time the first couple of days adjusting to the food intake, which is – of course – considerably lower then what I used to eat (which was waaayyy too much!) but the combination of sports and the nutrition plan is working really well. I am sticking to the recipes mostly for now, as that just makes it easier to follow the program and get into the swing of things, but it’s not rocket science and I think I should have no issue continuing with healthy recipes on my own at some point. This delicious tomato salad is one example of a light and satisfying meal you could have. If you want you could add little bits of feta or goatcheese in it, or maybe some blue cheese would be really tasty as well!
Now the sports…. I have always been a fairly sporty girl so what happens is that my heart and lungs are progressing to a fit level way faster then my muscles and tendons. Always a tricky situation as I have to be really careful not to overdo it. I am – after all –
30 kgs 25 kgs overweight, so that does put a strain on everything. Mish is telling us to workout 6 days a week but I just vary it a bit to not make it too heavy for myself. Once my legs are stronger I can always increase it when I want to. I do stick to the 6 days as it’s all about making a habit out of your exercise!
Now on to this salad; it’s simple yet incredibly tasty, provided you use good ripe and tasty tomatoes. We do have a lot of very bland and unappealing ones in the supermarket but I was in Amsterdam and got myself a large variety of tomatoes in all shapes, colors and sizes. Each one has a different flavor, from a green tigertomato to the intensly sweet little honey tomatoes. LOVE tomatoes! I do think I’m going to have to grow them in my own garden but we don’t have too much sunshine in the garden so that might be a little challenge. Anyway, mix the tomatoes with a little bit of cucumber pieces and add some fresh herbs to your taste (chives, parsley, basil and cilantro all work nicely)
