With christmas only being a mere couple of days away (which did struck sudden panick this morning when I realized it is next week!! And I have so much testing of recipes to do before I can confidently start making christmas dinner for my inlaws… So I am a little worried here!!) I figured it would be a good idea to have a healthy and light lunch today.
Although when I was browsing the aisle in the supermarket, maybe roquefort would not have been the healthiest option but tasty nonetheless. I had some rocket leftover from the daring cooks challenge (the 2nd making of the recipe) so I wanted to use that before it would wilt. Adding the pomegranate seeds was a great choice as I think the tastes of the salty cheese and the sweet, slightly sour seeds go really well together. I love lightly toasted pinenuts in almost any salad I made and because I keep those standard in my cupboard I toasted a few and tossed them in the salad too.
To finish it of I used a ready made thousand island dressing. Maybe not the most inventive but I just didn’t feel like making my own dressing, although that would literally be almost just as quick.
There is no real recipe here and it is unlikely you would need one, but if you want to know here are the ingredients used for this quick and tasty salad:
My plan is to go shopping in Amsterdam tomorrow to get some of the ingredients already for christmas plus a smaller sized ham that we want to make for christmas dinner. I can go with a raw ham but that has to cook about 5 hours so I thought I might get a smoked/cooked good quality ham and just glaze that in the oven with cloves too. I haven’t decided that but will discuss it with the butcher tomorrow too. See what he recommends doing. In either case I can make it the day before christmas. The meat can be eaten either cold or warm, so that is perfect for a no-stress christmas dinner. I still haven’t decided on the appetizer and dessert. I am thinking of doing maybe a few smaller amuse dishes for starters and then the ham. O and ofcourse we have to come up with some good side dishes for the ham… If anyone has any good suggestions feel free to share them!!
I also need to make some christmas cookies, cakes or something else that is nice to serve with coffee or tea. I saw a few lovely christmas cookies on various blogs which I might be trying out this week or beginning of next week. Obviously I also have to work here and there, so gotta see if I can fit everything in the schedule.
