It was bound to happen at some point or other… The realization that maybe, just maybe I was juggling too many blogs at one time. Something that everyone else already knew – ofcourse – but I just thought I could do it all… Well, it turns out I cannot. Boohoo…. *cries in the corner of the room and moves on with life* But in all seriousness, I think I am – in a way – addicted to blogging. I just love it. I can’t help myself.. From the writing to the photo taking to the anxiety if no one reads it, to obsessively watching my stats; it’s all part of the game but most importantly I love my readers. Seriously… what would ANY blog be without readers?
I am not a ‘big’ blog or should I say I am not one of the big bloggers out there and that’s ok. I just love to blog and by the looks of it, I will be doing it for a while too. What I did decide to do is to merge all my existing blogs into just the two. One in Dutch, Simones Kitchen (yes, I know the name is English but hey… it just sounds better) and one in English, which you are looking at right now. While I love, love, love Scribbles and Notes, it’s just not sustainable as my life evolves around food, so having a blog without food just seems a bit silly. So instead I will merge some of the content that I had over there into here. And don’t worry it will not be too different. It’s just a bit more of travel and maybe a kitten more and maybe a few more photography tutorials. But that’s ok right?
I guess in a way there is just something so satisfying in setting up a brand new blog, with shiny new design and shiny new everything that I keep falling into the trap. Maybe I should just starting doing it for others instead! Lol… I wish I had some fancy give away to share for my 5th birthday here but I almost forgot the date as it is! (and don’t tell anyone but I am actually 2 days late but no one will notice right?) So instead of sharing cake and pies and other sweet goods I am sharing this healthy pasta dish with you. ‘Cause right now; cake and cookies are a bit off limit for me and since I am going strong in working out (almost daily) and eating healthy I want to keep the momentum going, so no cake. I’ll promise I’ll have cake for you all later at some point!
This recipe is so simple you would almost not give the recipe but for argument sake; here it is! Enjoy and here’s to another 5 years of blogging! (cat picture is below the recipe..)
Pasta with feta, parsley, chili and lime
Cook Time: 12 min
Total Time: 12 min
This dish is very simple and you can enjoy it either warm or cold. It will be good either way.
- 75 gr penne pasta
- 1 lime
- 1 tbsp of pinenuts, roasted
- 1 tbsp of chopped fresh parsley
- olive oil
- 1/2 red chili, finely sliced
- 50 gr feta cheese, crumbled
Cook the pasta according to packet instructions while you cut all your vegetables and crumble the feta. Keep the feta aside.
Once the pasta is cooked, drain and transfer to a large bowl. You can basically add the other ingredients in their raw state or if you prefer you can quickly fry the red chili briefly. Up to you. Sprinkle some olive oil and lime juice over the pasta, stir and taste. Add some pepper and salt as needed and enjoy!
